
Baked Acorn Squash
This delicious baked acorn squash is by far the best squash I ever ate or made. It is a secret recipe from my culinary instructor. The addition of curry in this recipe is a "must try," as a hint of curry combined with the sweet brown sugar on the squash's surface is a terrific combination.
Recipe:
-1 Acorn squash
-2 tbsp. unsalted butter
-1 tbsp. brown sugar
-1 tsp. of curry powder
Steps:
1. Preheat oven to 350F.
2. Cut acorn in half, remove the seeds, and cut into quarters and peel the skin.
3. Take an oven-safe pan, add butter, brown sugar and curry powder, heat over
medium heat to melt the butter, and stir everything together.
4. Add the squash and brush the surface of the squash with the brown sugar
mixture.
5. Cover with foil and bake for 45 min. or until tender, flip the squash once half-way through. Baste the squash with glaze every 20 min.
